Canning, Freezing and Food Storage

This is a thread to post your tips and tricks to canning, freezing, and food storage. Any questions about length of time to store and the easiest manner in which to store it. Please share your tips and tricks, to help others out!

I love watching "good eats" with Alton Brown and I love beets  love, so I tried his pickled (refrigerator) beets today - I won't know if they're any good for awhile and I did kinda goof up a little - didn't pack them too well (that tends to be a problem I have with canning) so I had to make more liquid.  Anyhoo, I took a photo (I also posted this on EasyGarden if you happen to frequent that forum).

Yep and they look like pickled onions with beet juice, but I swear there are beets in there!  greeting

I'm ga-ga over cool canning jars, and found these made in Italy - didn't want to use them for hot water bath, but for refrigerator stuff I think they'll work just fine.

Will let you know if a week or so if they turned out okay.  And don't look too closely at the photo - you'll see beet juice everywhere!   rotflol

How did they turn out?
My MIL pickled some beets, there not very soft though, but the flavor is so good!! I think she should of cooked the beets a little longer.

mmm that looks like a good one i love watching food network thats how i learned how to blanch...actually it was Alton's show=D but i would have to say jelly making is my favorite!  i just learned last year my grandmother showed me how and then said your on your own.  and i love it blue berry black berry and elderberry are the ones i have mastered so far.  does anyone know of a good elderberry whine recipi I really want to try making some for my boyfriend.
