Pasta

In this thread, we will be posting various pasta recipes. We request that any questions, suggestions and feedback, to a particular recipe, be given it's own thread. This is in effort to keep the recipes in a single thread to make them easily found.


A deputy and a hooker all rolled into one... what more could a man ask for?

Rachy's FARFALLE CON PISELLI E PROCHIUTTO

Ingredients:
1 1/4 cups fresh or frozen peas
1/3 cup butter
6 oz ham, diced into 1/4" cubes
3tbsp fresh cream
2tbsp finely chopped parsley
salt and pepper
4 tbsp freshly greated parmesan cheese (get the brick, not the canned shaker stuff, so much better!)
14 oz farfalle

Boil the peas in salted water until half cooked. Combine the peas, butter and ham in a large skillet.Cook over medium-low heat for 10 minutes. Stir in 1 tbsp of the cream and continue cooking until the sauce becomes thick. Add the parsley and salt and pepper to taste. Cook the Farfalle in a large pot of salted water, boil until al dente. Drain well and transfer to the skillet with the sauce. Add the remaining cream and parmasean cheese. Toss well and serve hot.

Rachy's INSALATA DI CONCHIGLIE SPLENDIDA

Ingredients:
salt
4 tbsp extra virgin olive oil
4 hard cooked eggs
3 large ripe tomatoes
7 ounces tuna, preserved in oil (we use the kind in water)
2 scallions
4 tbsp of Mayo
2 tbsp finely chopped parsley
14 oz Conchiglie

Cook the conchiglie in a large pot of salted water until al dente.
Drain very thoroughly. Transfer to a large salad bowl and toss well with half the oil. Set aside to cool. Peel the eggs and cut into quarters lenghtwise. Dice the tomatoes into bitesized cubes. Break up the tuna.Slice the white bottom part of the scallion thinly. When the pasta is cool, add eggs, tomatoes, tuna, parsley, ramaining oil and mayo. Sprinkle with salt mix well and serve!
